Cabernets - Exceptionally Bold
Cabernet Sauvignon and steak make the ideal pair. Cabernets can have elevated levels of both alcohol and tannin resulting in a dry, multilayered, full-bodied wine with a long finish. Steak is the perfect foil to standup to the boldness of this varietal. The pronounced flavors and fattiness of steak counter the drying effects of the tannins, allowing the complex flavors of the wine to compliment the red meat. Together they are the perfect paring!
For October’s steak specials we’ve curated a rotating, expanded list of exceptional Cabernet Sauvignon to pour for you by the glass all month long.

2012 DOMAINE DE LA PETITE MAIRIE BOURGUEIL
This beautiful Cabernet Franc from France is light on its feet, with bright red fruits jumping out of the glass. Under-ripe cherry and green pepper flavors start off this wine and mouth-watering tannins leave you reaching for the glass. This is the perfect glass to enjoy at lunch.
Pair it with the Chicken Fried Steak Special.
2009 MAYACAMAS, MT. VEEDER, NAPA VALLEY
One of the old-school, tried and true of Napa Valley - this is not your Mother's Cabernet. Green tobacco, leather, earth and tart red fruits are aromas that first come to mind when sipping this wine. Truly an "old school" style in the "new world," this is an incredible opportunity to taste a wine that many have only heard about.
Pair it with the Steak and Eggs Special.
1994 CHATEAU PICHON LONGUEVILLE COMTESSE DE LALANDE, PAULLAC, BORDEAUX, FRANCE
An estate established in 1850 in the Bordeaux region of France, this wine was being made prior to California becoming a state! Cabernet Sauvignon dominates this wine, yet is heavily supported by Merlot in an effort to round out harder tannins at a younger stage in its life. Now, at 21 years old, this wine is vibrant as ever, and a true testament that Cabernet is the king of all red grapes. Aromatic notes of mushroom, turned garden soil, and dried black fruits scream for beef.
Pair it with the 28-Day Dry Aged Ribeye Special.
2012 GHOST BLOCK ESTATE, OAKVILLE, NAPA VALLEY
A rich, intense fruit-forward style of Cabernet - this is a hedonistic pleasure at its finest. Black currant, cassis, blueberry fruit are the first flavors to hit your palate. Supporting the fruit are bold tannins that cannot be tamed alone. The Ghost Block Estate gets its name from the plot of vineyards adjacent to the old Oakville Cemetery, which is fitting for an October glass of wine.
Pair it with the Filet Mignon Special.
2011 BATIC, CABERNET FRANC, VIPAVA VALLEY, SLOVENIA
An unusual place to think of for Cabernet, the Vipava Valley is just over the eastern border of Italy. The winery itself has been producing wines since the year 1520. Although many think of this wine as "old world" it is full of rich and ripe black fruit flavors including black cherry, blackberry and plum.
Pair it with the Snake River Farms American Wagyu Special.
2012 BRYANT FAMILY VINEYARD, PRITCHARD HILL, NAPA VALLEY
100% Cabernet Sauvignon made from a 13-acre estate vineyard atop Pritchard Hill, overlooking Lake Hennessey. A beautiful expression of the unique terroir, this wine is a testament to the dedication of the winemaking and vineyard team who aim to produce the finest wine possible from the site.
2012 CARDINALE, NAPA VALLEY
Cardinale is a collection of individual voices that tell a story, in this case the characters are the appellations and the story is the vintage. The individuality of the vineyards is there to enrich the experience. In 2012, the number of characters increased as the vintage was such that the quality of the expression of each appellation soared to the level of Cardinale’s expectation. Blackberries, shale, hints of earth, currant, Asian spice and mountain minerality reside alongside a breadth of structural tannins and weight from the concentration of fruit.
2010 CENYTH, SONOMA COUNTY
Beautiful dark ruby in color, this wine showcases lovely spice notes on the nose. On the palate, this elegant, classic Bordeaux style blend demonstrates hints of spice and nutmeg that comingle with white pepper flavors in delicate harmony. The finish is long, smooth with very fine tannins, ending with a lingering freshness of fruit.
2010 CORISON, NAPA VALLEY
Cathy Corison is the First Lady of Napa Valley Cabernet Sauvignon. She has been making wine in the valley since 1975 and for her eponymous label for over twenty-five years. Many consider her wines some of the most unique in the Valley as vintage after vintage she is able to deliver the most restrained (read: alcohol content) yet complex expression of Cabernet Sauvignon. Her wines are pure elegance and remind us of what Napa Valley wine used to be! The long, cool 2010 growing season and small crop yielded a wine of uncommon concentration. Dark, brooding flavors of berries and cassis dance with dusty minerality, baking spices and violet perfume!
2009 DALLA VALLE VINEYARDS, OAKVILLE, NAPA VALLEY
The first vintage, produced in 1986, established this wine as an instant Napa Valley classic. Select lots of Cabernet Sauvignon are blended with a small percentage of Cabernet Franc and aged in no greater than 60% new French oak. For close to three decades, this standard-bearer has consistently shown impressive structure and velvety berry flavors.
2012 KONGSGAARD, NAPA VALLEY
John Kongsgaard has been making wines in Napa for 20 years and in 1996 launched his eponymous label. This Cabernet Sauvignon is produced in miniscule quantities from vines grown on a rocky slope in the eastern part of Napa, creating a wine that is mineral-driven. A rich and powerful Napa Cabernet Sauvignon that is capable of aging beautifully in the cellar. The 2012 Cabernet Sauvignon is a terrific example of the year. Dark red cherry, cinnamon, cedar and tobacco open up in the glass, but the 2012 above all else a wine of pure texture. The 2012 finishes with notable intensity and power.
2012 SCARECROW, NAPA VALLEY
Crafted from the oldest, most balanced and most intensely flavorful Cabernet lots grown on the J. J. Cohn Estate, this impressive wine shows dark aromas of spiced plums, blackberries, mocha and cassis. Its dark complexity is equally evident on the palate, where the wine is at once refreshing and somewhat mysterious. The layers of complex flavors reveal themselves with time in the glass, shifting and swirling between bright fruit and dark vanilla/caramel tones. Scarecrow is the very definition of a miniscule production, cult Cabernet.
2012 SCHRADER, BECKSTOFFER TO KALON VINEYARD, NAPA VALLEY
A compelling exploration of the trio of Cabernet clones from the Beckstoffer-To Kalon Vineyard. This massive and dense wine provides enthralling notes of dark berries, especially blackberry and blackcurrant. With complex structure and concentration, the prodigious weight and character commands attention. Balancing out the ripe fruit characteristics of this wine with firm, grippy tannins, the 2012 Schrader is a tower of Cabernet power that continues to show a profound level of flavor.
2010 SHAFER, HILLSIDE SELECT, STAGS LEAP DISTRICT, NAPA VALLEY
Hillside Select is a wine of a place, produced each vintage from carefully selected blocks of the hillside vineyards surrounding the winery. These grapes are small and deeply colored, with concentrated flavors enhanced by meticulous winemaking and extensive aging in French oak barrels. Hillside Select consistently expresses the voluptuous fruit, rich flavors and velvety texture that characterize grapes grown in Stags Leap District.
